How to read and strip image metadata

Common questions
What is EXIF and why would I remove it?
EXIF is the small block of data cameras and phones write into a photo: the device, the date, and sometimes GPS coordinates. Removing it takes that trail out before you post a picture.
Does stripping the metadata change the picture?
No. The pixels stay exactly as they were. Only the embedded data block is dropped.
